Year 1 Term1

Students will learn:

  • The features of the course, the skills required and have an overview of the syllabus.
  • They will learn the building blocks of a healthy diet throughout all stages of life and core material on nutrition.
  • The function of macro and micronutrients in the diet.
  • How to conduct sensory analysis of food products.
  • They will establish a good working routine for practical lessons.

Year 1 Term2

Students will learn:

  • How to adapt a recipe to meet a range of special dietary needs.
  • Why the body needs energy and how it is measured.
  • Dietary related illnesses.
  • How heat is transferred into foods and different methods of heat transfer.

Year 1 Term3

Students will learn:

  • Functional and chemical properties of food.
  • Physical and chemical properties of food.
  • Micro-organisms and enzymes.
  • Traditional British and international cuisines.
  • How to conduct sample NEA (non-examined assessment) work.

Year 2 Term1

Student will recap prior learning. They will sit:

  • Non-Examination Assessment 1
  • Non-Examination Assessment 2

Year 2 Term2

Preparation for examined unit.
