Year 1 Term1
Students will learn:
- The features of the course, the skills required and have an overview of the syllabus.
- They will learn the building blocks of a healthy diet throughout all stages of life and core material on nutrition.
- The function of macro and micronutrients in the diet.
- How to conduct sensory analysis of food products.
- They will establish a good working routine for practical lessons.
Year 1 Term2
Students will learn:
- How to adapt a recipe to meet a range of special dietary needs.
- Why the body needs energy and how it is measured.
- Dietary related illnesses.
- How heat is transferred into foods and different methods of heat transfer.
Year 1 Term3
Students will learn:
- Functional and chemical properties of food.
- Physical and chemical properties of food.
- Micro-organisms and enzymes.
- Traditional British and international cuisines.
- How to conduct sample NEA (non-examined assessment) work.
Year 2 Term1
Student will recap prior learning. They will sit:
- Non-Examination Assessment 1
- Non-Examination Assessment 2
Year 2 Term2
Preparation for examined unit.
